How to look and feel amazing wearing pastel outfit

I've logged to my Instagram account the other day and I got that amazing inspiration from a lady I follow to create some great creative ideas for winter pastel outfit.
It's amazing how much change to our mood can be made just with few simple positive fashion items. I can imagine myself so happy and feeling awesome knowing that I wear one of those optimistic outfits. You don't need to break a bank to wear those amazing, stylish ideas which will cheer you up and lift up your mood instantly.

I have nothing against contemporary beige, black or grey styling fashion idea but those winter pastel outfits will make you stand out of the crowd and immediately happy without even trying. I think we know all that colours play a very important part in our life. Think how you feel when you are entering light, vibrant space such as nice restaurant or shop filled with pastel colours. It  makes so much difference. Why not become a happiness magnet wearing positive, pastel,rainbow colours for everyday activities.
I would love to buy all of those clothes for myself and create even more positive ambience around me playing with those subtle shades of  rainbow.

Vegan coconut & chocolate no bake cheese cake

I used to be almost addicted to Bounty bars before I became vegan. I love taste of coconut. I was thinking how to make a great coconut and chocolate cheese cake.  I came with this idea of creating a multi layers vegan cheese cake which will taste heavenly. This cake is an effect of my experiment with coconut milk & designated coconut. It's a great source of protein, saturated fat and carbohydrates.


Recipe below, you don't need to wait for few hours for that cake to set and be ready to serve.

Serves 10
Makes 5 layers vegan cheese cake
Dish:( for container 12x20x6 cm width-lenght-deepth )

Preparation time: up to 2 hours

550 ml of soy milk
400 ml of coconut milk
20 grams of raw cocoa powder
30 grams of designated coconut
40 grams of brown sugar( you can use any vegan sweetener such as agave syrup, maple syrup or stevia sweetner)
15 grams of agar agar powder

1. Pour 200 ml of soy milk to saucepan , add 5 grams of brown sugar and 3 grams( less than tea spoon) of agar agar powder.Bring to boil on medium heat to activate agar agar powder, keep to stir all the time.
2. Leave the mixture on side to cool down for about 5 minutes and then pour it to container or other dish of your choice( you can always divide that mixture to small round glass dishes or ramekins). Leave it to set for about 20-30 minutes
3. Pour 200 ml of coconut milk to saucepan add agar agar powder, designated coconut and tea spoon of brown sugar. Bring it to boil while stiring. Boil for about 2-3 minutes after first bubble will appear and then leave it on side for around 5 minutes to cool down.
4.Pour the mixture to that same dish as the first layer.
5. Keep repeating those 3 above steps until you will achieve 5 or more layers.

Apple,oats & flax seeds vegan energy bites

I don't know about you but I am almost addicted to those wonderful apple bites which taste bit like a apple pie. Those small bites are so nice and so difficult to resist. Packed with fibre, protein,natural sweetness are also so easy& quick to make. Taste of that treat remains me the taste of lovely home made apple pie.I am great fan of quick and easy, healthy vegan recipes which can be easily adopted in just about every kitchen.


 Makes about 30  bites

1 cup of grated apples/apple sauce
2 cups of rolled oats
3tsp of cinnamon
4 tsp of flax seeds
2 tsp of powder Stevia sweetener or other vegan sweetener of your choice

1.Mix all the ingredients together in a large bowl until they are combined well and then form small bites with your fingers.
2. Enjoy it !
3. You can store leftover mixture in a fridge in air tight container for up to a week.

Such a nice and yummy vegan apple & flax seed energy bites and so quick to make it will make it great,healthy snack either for work , school or just to share with your friends and family. I have used golden flax seed but you can do it with dark variation as well.

Blackberry vegan cheesecake recipe 

One of my favourite desserts is vegan cheesecake. I have used frozen blackberries which I have picked myself last year, can you believe it, yeah, I have done it with my own hands.


But if you would like to try this delicious recipe you can use any fruit either fresh or frozen.
The beauty of this sweet treat is very quick preparation time and simplicity as it contains only 6 ingredients. I wanted to make this cake as healthy as possible by combining different raw ingredients.
I have added flax seed to enrich this blackberry vegan cheesecake with it's source of fibre and Omega 3 fat.


You don't need to bake it , you don't need freezer for this vegan cheesecake to set, you don't need to wait for hours to consume your dessert. It will be ready to eat within 30-45 minutes. It's smooth and creamy consistency and delicious taste of fruits will make even the most fussy cake lover happy and it will melt in your mouth. You can keep this awesome dessert for up to a week in a air tight container in the fridge. This dessert will be great for diabetics.



Preparation time 10-15 minutes
4 serving

80 grams of pitted, chopped dates ( you can use any type)
150 grams of rolled oats
3 tsp of flax seed
2 tsp of water or plant milk

300 grams of frozen or fresh blackberries( you can use any fruits)
4tsp of stevia sweeter( you can use any type of sweetener such as birch sugar, maple syrup 
1 tsp of agar agar ( plant based gelatin)
400 ml of plant milk

1. Combine dates, oat and flax seed in blender until  they are smooth in it's texture. take ready crust out of blender and transfer to small ramekin/base/glass dish , press firmly with fork or spoon to create firm, well bonded  base of your vegan cheesecake.

2. Transfer your fruits of your choice to blender and blend for about 2-3 minutes until you will receive smooth mixture.

3. Transfer your crushed fruits to medium saucepan , pour milk , add sweetener and agar agar powder. Set on medium heat and keep stirring the mixture all the time and then boil it for 2-3 minutes after first bubbles appear in order to activate agar agar powder.

4. Leave it to cool down for 5 minutes and then transfer this mixture to ramekin/base/glass dish
   to set for another 30-45 minutes. 

5.Enjoy your blackberry vegan cheesecake !
